Decades ago I went back to traditional (Expensive) carving knives because I thought it was cooler. But now that I'm into sous vide and smoking, I wanted more consistent cuts and repeatedly sharpening knives became tedious. So I went back to the electric knife and it's just great to plug it in and do some really consistent carving. I picked Cuisinart because I trust the brand and have not been disap[pointed.
The knife works great as long as you let it do the work don't force it. It does get warm after using a couple of minutes. I put a very thin layer of veg oil between blades and the knife worked alot easier with less heat. I read several reviews of people getting cracks in housing. I can see this if you are using and getting it hot them putting up while hot let it cool down first. But all in all I really like the knife and it's performance.
I have only used this once & it cuts very well. My old knife used to jam because the meat got between the blades which didn’t happen with the new knife. My negative opinion is the handle is quite heavy for my arthritic hand.
So far, I have only used this to slice bread, which is the main reason we bought it. It does a nice job of that. I have limited grip, and this knife is very easy for me to use.
