It only serves for dough.

It only serves for dough. Try for pastry and it doesn't work. I tried 3 recipes and damaged my result. Very bad. I'm thinking of returning so I can buy a kitchenaid
It’s a great mixer. Mainly mix sourdough consisting of two loaves 2000g. Today mixed my 1st loaf of 1000g, the minimum recommended. It did well. The only thing I have to get use to is how much to cool my water so that the final temperature is reached at the end of my mixing cycle. I found out today with a smaller loaf that instead of 40 degree water should have been closer to 35. So it’s a learning curve with cold water vs low/high hydration vs final weight of the dough. Otherwise I really like it. Makes my arms feel much better without working by hand. After experience I could easily rate this mixer a 5.
I love this stand mixer for Sourdough but …. So I tried making a batch of cookies with the silicone beater. I used small butter cubes to the mixer first to cream. It didn’t go well at first. The beater balled up the butter cubes and it took a lot of hands on using a spatula to guide the butter. Then once I thought that it was ready to add the sugars, it repeated the balled up process where I had to use my spatula. It took a good bit of time to cream before adding the vanilla and eggs. I then added the flour, baking soda, and baking powder mixture and mixed just until incorporated. This didn’t take any time at all but then I added the chocolate chips on a very low speed. This is when the dough shot straight up the backside of the mixer bowl. I used the spatula to keep the chocolate chips inside. This was a 1X dough. I can only imagine how difficult it would have been with. 2X batch of dough. I had to clean the dough out of the beater bar attachment place as well as free the dough from the beater. Honestly, I don’t love the silicone on the mixer beater. It was a pain to clean. To summarize, I love my Ooni for bread making but my KitchenAid Pro is much more efficient for mixing cookie dough. I was hoping to retire my KA but not until Ooni comes out with a better mixing silicone free beater, I haven’t tried the whisk attachment yet.
This mixer is the best for dough I never have to to worry about building gluten but the only thing o was worried a lot is the dough hook breaking. I don’t bake all the time but for some reason the hook broke. I had it for less than 6 months. They did replace it right away I wish there was an easier way to buy parts
