We put it head-to-head with 6 other mixers (3 KitchenAid models, a Bosch Universal Plus, and an Ankarsrum Assistent Original) and while the whisking performance is really lacking at the moment, everything else is best-in-class. It took second in our comparison (to the Ankarsrum which was 10x faster at whipping tasks), but if the whisk was more efficient it'd be our daily driver.
Makes great dough but my results out of the oven are on the dissapointing side. At this point, I'm finding it's a learning curve error on my part. I think I kneed it too long since the crust is more than chewy, it tough. My last patch had the best crust so far but could be better. What I'm going for is crispy-chewy but not tough like beef jerky. Inside is soft with either artesian style bread or smooth and even air pockets. . Machine performance is excellent. The baker needs a bit more education.
I have been using a stand mixer for years and up until my recent purchase I never knew what I was missing. The dough hook and bar combine with the rotating bowl are genius. The R&D team at Ooni really did their homework and I only wish is that it had arrived 5 years ago.
I have been mainly using it to mix bread dough. It is able to mix 3k batch of dough easily without mixer or dough getting overheated. One of the best mixer I have own do far.
