I love the Ooni Dough Mixer but have a design flaw to report . . . the underside of the mixing bowl has perforations in it to lock the bowl into the rotating base. These perforations in stainless steel have metal burrs that are very sharp— sharp enough to have given me quite the cut in one of my fingers when holding the base of stainless steel bowl while transferring the dough to another bowl. This could be remedied by better quality control in the manufacture of the bowl.
The mixer is a good option for those looking for a spiral mixer but don’t have the space or interest for a dedicated spiral mixer.
The only negative that I have experienced thus far is that the minimum capacity of 1kg is not accurate for higher hydration doughs. In my experience, I have found that it has trouble adequately mixing high hydration doughs under 1400 grams. As a result, you need to make a larger batch or knead by hand if making a high hydration dough under 1400 grams. Otherwise, the mixer will not efficiently mix the dough and it will result in dough temperatures that are too high by the time the dough is sufficiently developed.
I primarily make sourdough bread, bagels, and English muffins. I am amazed at how much better my baked goods taste. There is a small. learning curve for reading the dough. I wish I had this mixer when I first started baking breads
Great quality and it gets the job done beautifully! It creates a well desired extensibility into the dough, unlike mixers like Kitchen Aid that make the dough too tight and elastic.
