This mixer was the game changer I was looking for! I make sourdough sandwich bread that went from good to great by switching to an Ooni mixer. I can’t wait to see what else I can do with this wonderful machine.

The machine is sturdy and performs as advertised. The reason for the low rating is that there are virtually no operating suggestions, recipes etc to give someone an idea of what speeds and what duration of mix for dough. It has been basically a trial by error process and getting info from internet users. Not to mention trying to adjust the temperature for friction.
It would be most helpful if Ooni gave some suggestions and direction. Seeing as how they should know their machine better than anyone.

I absolutely love it. I teach pasta and pizza classes and it makes my job so much easier given that we just have to put the ingredients in and let the mixer do its job. It also really simplifies the process of working with high hydration doughs, building beautiful gluten networks that would be very laborious to create by hand.

Way better than Kitchen Aid!

I have been making pizza dough and bread dough consistently the past 30 years although I feel my dough has always turned out very good. It used to take a lot of work and effort to get it there. . I’ve only used the Ooni spiral mixer twice now, but I have to say it has put my pizza dough on a whole new level. I also used it to mix a batch of pumpkin cookies which again was so effortless typically, my pumpkin cookie recipe requires me to break the recipe in half for the KitchenAid. I no longer have to do that and it was a lot more consistent. If you’re contemplating getting one of these mixers And you have the money, do not give it any more thought just buy it. You will be happy you did.

Though I have only used it a handle full of times at this point. It is a welcomed addition to my home baking needs. I'm a professional chef who only does baking at home for fun. It is very well streamlined and super intuitive and simple to use. I'm sure as I use it more I will have more to say, but so far I am thrilled rto have it.

Great Mixer.

Before buying the mixer, I watched tons of video reviews. The same thing they all had in common, and the only complaint, was that the mixer is loud. The first thing I wanted to check was how loud it was. Many people said they got used to the noise, but I had to see for myself. I got the mixer unboxed and plugged it in. I ran it empty and gradually increased the speed. I really didn't notice it being that loud at all. If I had to make a phone call, I wouldn't walk away from the mixer to escape the noise. Actually, it is quieter than my older mixer. Granted, when you do turn it up to 100%, it is louder, but still as bad as everyone in the video reviews that you can watch.
The first loaf I made was a jalapeno and cheddar, sourdough loaf. I was trying to get advice from some sourdough groups and the consensus seemed to be is to add the jalapeno and cheese at the very end of mixing the dough, about the last two minutes. That was wrong. Granted, when I was adding it in by hand during stretch and folds, It was a real pain. Cheese was always sticking out or jalapenos would just give up and be laying on the counter by themselves.
I went ahead and added them for the last two minutes and the mixer incorporated them quickly. But it actually mixed them too well. I used sliced jalapenos and quarter inch cubed cheddar cubes. I was watching everything blend in and was amazed. I could hardly see any of the additions. I started to think that the mixer just pushed them all to the bottom and when I removed the dough from the bowl they would be laying there on the bottom of the bowl.
I pulled the dough out and could only see specks of cheese and jalapenos. I was impressed and went ahead and finally cooked it. After baking I decided to cut one of the loaves I had made. My first thoughts were, "Were's the cheese and jalapenos. As was with the outside of the dough, there were just specks of the additions. The mixer somehow had "ground up" the cheese and jalapenos. I still don't know how they got ground up. The spiral mixing tool was so smooth and shouldn't have torn them apart. The only thing I could think of was that the cheese and jalapenos must have got cut when the dough hook pushed them onto or into the breaker bar. Next time, maybe thirty seconds.
Round two. The next try was rye bread. With AI being a thing now I decided to ask AI, I have no experience with the Ooni and an amateur at sourdough baking. I thought AI should know what to do.
"Give me a recipe for sourdough rye bread using my Ooni spiral mixer pro. " If you haven't tried it, give it a try. Not only does it give you the recipe, but at what speed and how much time you should run the mixer. I was impressed with my first venture into AI. But AI also gives you suggestions on how to improve your recipe. "Need some extra gluten because of the rye content? Try adding some vital wheat gluten. Want a darker color? Add some malt. " Other than doubling the Caraway seeds it recommended, I follow the recipe to a tee. I was quite impressed with the results.
In conclusion, this was a tough decision to make. The Ooni isn't cheap, but it's the cheapest spiral mixer you can buy. Everything made in Europe is at least double the price, if not more. Granted, it does have its limitations. The one thing that is mentioned is difficulty whipping up egg whites. I have a cabinet full of other appliances that can do that job. But this will mix dough and build gluten like you have never experienced. When the dough starts forming that "pumpkin" shape, it is amazing. I'm sure that wears off after a while, but the first few times it's still a thrill. My old stand mixer does a good job, and has it place in making other items. But if you are an amateur baker or have a small cottage bakery business going, you have to look really hard at the Ooni.
