Very good motor.

I really liek the Ooni Halo Mixer. The Motor handles my big bathes better than my previous mixer. However I am finding it diffucult to figure out what speed to use when Mixing. I mostly make white bread and other mulit grain breads. Most of the recipies I have found are for sour dough bread. I also have beenhaving a hard time with explanation and or user manulas expaling the differnt speeds of mixing.

Game-changer mixer for bread, bagels, pizza doughs

I've had the Ooni Halo now for about 4 months, and use it a couple of times a week. Bit of a learning curve initially, but overall it works extremely well for bread/bagel/pizza doughs. Have not used the beater & whisk attachments, though I think they would work well with larger volume recipes.
Contrary to some opinions I've read, I often mix fairly small (~400-500g flour) batches in it, and it works well with a bit of assistance with a silicone spatula to drive ingredients from edge of bowl to center. With small batches and higher hydration, you can get a bit of the dough climbing up the spiral, but this is easy to manage with a tap of the silicone spatula, and really no problem. Larger batches (1000+ g flour) do not have this issue in my experience.
A major benefit is for high-hydration (75%+) sourdough that I bake on a weekly basis. Direct mixing at a hydration over ~65% can make it hard to develop strong gluten structure. So, I use the Halo to generate good gluten formation at an initial hydration of ~60-65%. Once a window pane is achieved, dribble in remaining required water (bassinage process) until well incorporated. This effectively achieves an excellent dough structure that at most will need a couple of coil folds. Results in a really good rise and final crumb structure.
For rich doughs like brioche, Halo makes it easy to first develop good gluten structure, and then add butter (& more water if needed) to develop a great final dough structure/strength. Overall, I'm getting really good final baked results with far less effort than by hand. The ability to perform single-loaf batches also makes it efficient to develop new recipes. Halo also works very well with stiff (~55% hydration) bagel doughs without straining. These doughs are absolutely beautiful and supple just out of the mixer, and a joy to work with.
Do monitor your dough temperature! The Halo tends to heat the dough a bit, so I offset this by using cooler water, and sometimes ice-cold water if I'm employing the bassinage process. I've never had a final mixed batch be more than about 80-81degF, and by target final dough temperature is typically 78degF.
For a serious baker who can afford it, this is a really worthwhile purchase in my opinion. Works far more effectively on bread & bagel doughs than my still in great shape 35 year old Kitchen Aid Pro that I now just use for cakes, cookies, and the pasta rolling attachments.

I researched stand/spiral mixers for weeks! Scoured reviews. I had my heart set on the Ooni Halo pro. I finally took the leap after a really big bake day (I specialize in sourdough bread) and my hands hurt so bad from hand mixing so many batches. Right out of the box this thing is a beast! First go I maxed out the flour weight. Had to see if she could handle it. It never skipped a beat! Best investment I've made! Now I just need my bread oven Ooni when are you making one of those???

Love This Mixer!!!

This by far is my best sourdough investment yet. Mixes perfectly, holds alot, the timer is wonderful. I will say it is a little louder than I'm used to but it does not jump or bounce around on the counter. Very pricey but in the end the time saved is worth it.

The mixer is great fro bread dough. I have not tried it on any other recipes. I gave it 5 starts based on the dough capabilities. No need for S&F when making sourdough. The only downfall so far is that it is heavy.

Love this mixer for making both sourdough and regular yeasted breads. I can NOT believe how easy it is to mix and get a windowpane on my breads now. I have both the Ankarsrum and the Bosch mixers. While I also love them, the Ooni is game changing for breads.
