Its strongest attribute is temperature stability: it reliably hits target settings and maintains them throughout the brew. Combined with its managed pulse system, the machine removes pour-pattern agitation as a variable, functioning much like a Mellodrip in automated form. This produces uniform, low-turbulence extraction that is highly repeatable.
The result is reliable clarity across medium-light to medium roasts with minimal dialing-in. Most adjustments happen through temperature, grind, dose, or light bypass rather than agitation. This makes the Aiden ideal for users who want stable recipes and controlled extraction rather than manual nuance. The trade-off is stylistic range: coffees that benefit from higher agitation—dense washed Ethiopians, fruit-forward anaerobics, or older lots—may taste muted without switching to a V60 for more turbulence.

Good but still on a learning curve

Maybe I’m still learning how to use it. Pretty good overall but I can’t figure out the grind amounts exactly and when to use instant brew vs programmed brews based on roast. Just tell me what to do and what number to grind on have had some delicious coffee and some very bitter or sour.

This thing makes great coffee consistently and lets you tinker with so many settings if that’s your choice. I got it as a new dad since I didn’t have much time to brew my own pour overs with a baby needing attention.
