After making adjustments to the recipes that came with the bread maker I am finally getting better results. At first they were like little bread bricks. They are a bit lighter and rising better. Not the greatest though.

I like the bread machine but do not like having to push the button to stop it so there will be only one raise. I use it mostly to make dough for rolls.

I had to start making homemade bread because of a nickel allergy I was just diagnosed with. I had never made bread in a machine before; I love it. Just follow the easy instructions. I love that it beeps to let you know to add raisins etc, then beeps if you want to take out the paddle and then beeps when done.

This bread make does make bread, but I have yet to produce a "perfect' loaf even after making iterative adjustments. Main problem was the top sinking in. The last, most successful loaf, used bread flour and slightly less yeast. Next loaf will use more flour. Worked best leaving paddle in during bake. Taste is fine, texture is a bit crumbly, like it didn't knead enough.

After my neighbor bought this machine along with Pamela's Gluten-free Bread Mix, I knew I needed it as well! This has made fresh bread a reality again, and even simpler than before living GF! My only issue is that the peg for the paddle is not non-stick and is super annoying to clean, but otherwise this is perfect for us!

This is my second bread maker and I have made bread many times the old-fashioned way. I found the bread maker easy to use and produced consistent results in the half dozen loaves made so far. The instructions could be clearer. The user guide has no table of times for each program and cycle. Instead I am annotating the booklet so I can anticipate when to remove the paddle. I am left with blind experimentation to find a program with the proper rising or bake times. My biggest disappointment is the lack of recipes. The two I have made result in dry, dense loaves. I am looking for a European-style hearty mixed-grain bread. My attempts to find recipes online have not been successful. My suggestion to Cuisinart is either to sponsor people to develop recipes or to underwrite the development of guidelines for modifying recipes for the bread maker.
