Excited to use it, but missing insert inside knob

Setup and instructions were straight forward and simple, but one of my control knobs is missing the insert so it is unusable.

Bolt is offset

I'm on the second step of putting my 28" griddle together but the welded nut is offset by the smallest amount so the thumb screw won't go in.
