We keep having problems maintaining

Don't bother with the gas adapter - use wood or coal

[This review was collected as part of a promotion.] Mine is clearly defective. It randomly extinguishes. Restarts fine, runs for a minute or five, then goes out again. I've tried several tanks that work on other grills and heaters without any issues. Piezo sparker works one of ten times, so I often have to light with and external flame. It doesn't get the oven nearly as hot as I can get it, and not as fast, as with wood and/or coal. The flow valve is also far from linear. It's all the way down at minimum, turn it a couple degrees of rotation and it's running at least at 50%, a couple degrees more, nearly full go.

You will have a hot stone in 15min, no struggles - pizza ready in 30 min if you have a part bake pizza in the freezer! Weekend pizzas!
Tips though: 15 min high heat when reaches 750F - load the oven and lower the flame. In my case my sourdough part bake pizza is ready in max 3 min! 2 pizzas in 10 min! No more bad pizzas for life!

Trouble lighting itself

When it works, it works great! The first one didn’t work at all, no worries because Ooni replaced it. The second one sometimes works on its own after turning it on, but most of the time I have to use a match to ignite it. When you do that though, the flame stays strong and it makes a great pizza.

Ignition never worked

[This review was collected as part of a promotion.] The cooking part is fine. The fact that the ignition never worked is a problem. Ooni kind enough to send a replacement but the ignition never worked in that one either. Tried tinkering, couldn't improve it
