It only heats up to 380 degrees. This is my 6th Weber. I have a Summit at my house that get up to 700 degrees within 3 minutes of starting. I bought the S-335 for our Pool. That will be the last Weber I buy.

It sounds like you may be activating a safety device built into the regulator. This safety device is a component of all LP gas regulators and is designed to reduce the flow of gas in the event of a leak.

You can inadvertently activate the safety device without having a gas leak. Typically, this occurs if you do not wait a sufficient time between opening the tank valve and the burner control knobs or if one or more of the burner control knobs is in an open position when opening the LP tank valve. When the safety device has been activated the grill is referred to as being in “bypass”.

Keep in mind that the safety device reacts to gas leaks. If a grill is in bypass, the gas connections and hose should be tested for leaks with a soap and water solution.

If you do activate the gas regulator safety device, the grill may struggle to reach high temperatures or may not light at all, even with all burners on the START/HIGH setting.

To ensure that you are not inadvertently activating the safety device as you turn on the grill, please use the following procedure:

-Turn all burner control knobs to OFF, including the side burner control knob if present.

- Visually confirm all burners are extinguished (no flame present)

-Make sure the grill lid is open. Open the LP tank valve and then wait at least 60 seconds. This will allow the hose and regulator to pressurize.

-Turn the appropriate burner control knob for your model grill to the START/HIGH position and then ignite the grill by pushing the ignition button.

-Turn each of the other burner control knobs to high, one at a time, and press the igniter button (if applicable for your model). Repeat this process until all the burners have been lit.

-Close the grill lid.

-The grill should reach approximately 500 to 550 degrees in 10-15 minutes.

When you are done grilling:

-Turn all burner control knobs to the OFF position

-Turn off the LP tank valve last.

Fantastic grill

[This review was collected as part of a promotion.] Overall: 9.5/10.
Assembly: assembly overall took me about 4-4.5 hours. It is very impressive how much cardboard they can fit into one giant cardboard box. Instructions were pretty straight-forward and easy to understand. I'm not the handiest person out there so most people could probably knock it out quicker. The only drawback I saw was that the instructions and the boxes had one switchup--the parts inside of the box labeled "I" were actually the parts inside of the box for "J". Took me longer than I'd like to admit to realize that.
Like #1: There's a lot to like. I love the added storage compartment underneath the stovetop burner. It even has a little spot where you can conveniently store your seasonings. Very convenient and concealed magnetic door. 
Like #2: I also think the interchangeable components below the sear grates are a fantastic idea. You can simply remove the standard grilling grates and put double-sided sear grates (for grilling steaks), a glazed baking stone (for cooking a pizza), a wok, or even a cast iron skillet right onto your grill. The frame that all these additional pieces can sit on sits flush underneath the standard cooking grates, which is very convenient (i.e., you can leave it on there even if normal grilling). See picture. Or if you don't want to keep it there, it fits nicely in the storage compartment.
Like #3: extendable top tray. This is also a nifty idea. I haven't owned a grill that had one of these. I also haven't used it yet, and in all likelihood it won't come in handy too often for me. But when you're grilling burgers/hot dogs for dozens of people, that extra space will come in handy. It stays concealed nicely and when it folds out it feels very sturdy.
Dislike: relatively minor in the grand scheme of things, but I wish that this came with larger, more rugged wheels. I personally like to grill in the driveway on occasion, and pushing this through the grass in my backyard all the way to the front of the house was a little tough. That being said, moving this around the patio is simple. It has wheels that lock, and when it's on a smooth surface, the wheels glide nicely.
Overall: Overall, I would give this grill a 9.5/10. This thing is awesome. Very intuitive, and steaks have come out perfect when using the searing feature.

Fantastic. It generates a lot of heat, so I'm having to learn to dial things back a bit from my Genesis 3000 series grill. But as time goes by, I'm learning I can control a much greater range of consistent temperatures.
