Spatchcock turkey turned out amazingly well. The smoke flavor from the pellets wasn’t overpowering. I would recommend the pellets for turkey. I’m going to try on chicken legs this weekend.

No Smoke

Have used this blend before with excellent results. This time they maintained temperature fine but absolutely no smoke. Finished the cook with apple pellets with no problems. Tested them again later with no smoke produced.

We recommend, for best smoke results, to not only place food on the top rack if available, but also using lower temperatures such as 165–180 degrees, with longer cooking times. The smoke may seem like it is not visible or there in the grill, however, we can assure it is there. I cooked a 11-12 lb bird and used half the brine mix since it said it was for an 18-20 lb. Used the Pork & Poultry rub. The Turkey Pellets were fresh and had no dust. Smoked on the grill at 190 for 2 hours and sprayed apple juice on the bird 3 times. Moved it to a broiling rack and cooked at 340. It took only 1hr 15-30 minutes to get 165 internal and golden brown outside. The meat was evenly done throughout and had stayed moist. I gave this kit a 3-star average b/c the smoke flavor was not different from the regular hardwood mix. Also (although this was my first time to brine a bird) the brine added too much sage flavor to the meat - not my favorite. I cooked a second bird - it was a butter ball 12-lb. I did not brine it, but used the P&P rub and the Turkey Pellets. Smoke and cook times were about the same. That was what we served on Thanksgiving. It turned out very well and got very high thumbs-up for flavor and moistness.

These Pellets add a terriffic flavor to Turkey Breast. I was using the Pecan pellets, but these are much better flavor wise. I like the Meat Church Rub and Brine mix the best, but the brine and rub with these pellets is pretty good too. They always show up in a couple of days and always arrive intact. Highly Recommended.
