Great Oven Cooks Woodfired Pizza so so well

This is an amazing oven that cooks the pies to perfection.
But my pizza stone has cracked after around 20 pizzas made. Do you offer a replacement for cracked stones??? had the oven for about 3 months

Excellent indoor oven for authentic pizza

After moving to the Midwest, we lamented the inability to use our outdoor pizza oven in winter. The Pizzaiolo solves this problem and delivers on the promise of a true pizza oven experience. Honestly, I was not sold on this when my husband purchased it. I was happily proven wrong by the first beautiful Margarita that came out! Not only was the crust perfect, but the speed is fantastic, allowing you to provide individual pizzas for a group very fast. Keep in mind you will need good ventilation that goes directly outside. We put our on a large board directly under our commercial range hood when we use it. Definitely recommended for the pizza afficionado.

Life Changing Kitchen Appliance!

On the advice of a friend, my Wife bought the Pizzaiolo for me as a 60th birthday present. At the time I was pizza-curious, but this unexpected gift made me pizza-passionate! All the hype is true; the Pizzaiolo is fantastic and the next best thing to a real pizza oven. I've had mine for two years now with 0.00% issues and 100% perfectly cooked pizza.
I cook for myself and probably average two pizzas a week. I usually alternate between Thin Crust and Wood Fired settings, right now I'm on a Thin Crust kick. The learning curve was all on the prep side. It took awhile for me to get proficient with throwing a thin crust, and coming up with the right sauce and cheese blend. Now, I just plug in the oven, turn it on; and by the time I've thrown the dough and prepped my pizza - about 10 minutes - the oven is ready to go. The cooking part is always perfect. I cannot overstate this enough. The different pizza settings are exactly what they say they are. It's surprisingly accurate and shockingly fast.
The Pizzaolio oven is built like a tank! It is heavy and supremely well-insulated. The controls couldn't be simpler. I've never broken a Breville pizza stone in over two years of regular use. I rarely clean the pizza stone, and when I do, I just wipe it down with a damp cloth - I never submerge it in water. The high cooking temperatures will carbonize any residue in the oven, so the Pizzaolio is somewhat self-cleaning. A wipe down is usually all the cleaning thats required.
The Pizzaolio oven has added a new dimension to cooking at home. There are so many different ingredients to try! I have even successfully cooked a delicious dessert pizza with Nutella and marshmallows and a chocolate chip stuffed crust around the edges! It cooks so fast, it's great for a party where everyone can have their own personal pizzas within minutes.
The price may be off-putting, but from my two-year vantage point, I love and use it so much, it now seems like a bargain and a no-brainer. There is nothing else quite like it.

First look - Makes great pizza

We thought we were making great pizza in our regular oven with a pizza steel, but this pizzaiolo looked intriguing. It could get much hotter than our convection oven, and it directly heated the stone under the pizza. Well, guess what was under the Christmas tree this year. We recently tried it out, and it made amazingly good pizza, much better and with less fuss and bother than with our convection oven.
We've been making pizza for a while, so we used our usual recipe from the Chez Panisse Pizza Cookbook. That should give you an idea of how long we have been making pizza. This dough contains a bit of rye flour, some olive oil, and some heavy cream along with the pizza flour, yeast, water and salt. It takes about an hour to rise, so it is very convenient. A double recipe, 40 oz of dough, made five roughly 12" pizzas. Based on our experience, if you already have a favorite dough recipe, it will work even better with this pizzaiolo.
We tried out the wood fired mode. We figured we might as well go for some serious heat. It cooked a pizza in two minutes. The crust was crusty, chewy and lightly browned. We were worried that our toppings - prosciutto, caramelized onions, asparagus, squash - might burn, but they just cooked properly. The pizzaiolo heated up in fifteen minutes and reheated quickly for pizza after pizza.

Having worked in pizzerias I knew the oven mattered. I thought I had addressed that with pizza stones. I was wrong. You could put a shoe in this thing and it’ll churn out great pizza. Keeps at temperature on a 2 minute cook time churning out pizzas. Note: photo shows black olive pizza.

Consistency of Temp Control for Pizza Excellence

The independent closed loop controllers above an below the pizza allow you to make any style pizza you want. I thought a lot about cheaper gas and wood units before deciding I wanted the electric Smart Pizzaiolo. This unit makes it so easy to get consistent results. I can now consistently make a quite authentic Naples Magherita which cooks to perfection in 2 minutes. I have had NM several times in Naples, Italy but struggled to find it near Boston. I also have been using the included pan to make top notch Boston South Shore Bar pizza at home. I will try a NYC style next I guess for variety sake. The controls are well thought out and make it simple to make any style with consistency. It comes with really helpful recipe cards for different styles to quick start you.

My Research Paid Off

My niece purchased hers 3 years ago and has pizza twice weekly at least. Sometimes every night. She had researched and had her mind set on getting the Breville Pizziolo, which is my story as well. This is the only way to get a true pizza in the comfort of your home. Throwing an outdoor Pizza Party or as an appetizer or canapé at a more structured event is easy and fast. In the long run we have the best pizza cooker available, have multiple opportunities to discover the many options in making crusts and ingredients, and are able to save quite a bit of money spent on pizza from restaurants. The Breville Pizzaiolo delivers everything it promises and home made pizza tastes the best. I could eat pizza every night of the week and be happy. Thanks Breville!
