This set is the perfect duo set. These are the two most used knives in my kitchen, so they will certainly get a lot of use.
The Miyabi Evolution is made from FC61 steel so it is very sharp and durable. The handle is extremely comfortable due to the shape. All in all, they are very beautiful knives.

This is a great set and intro to Japanese cutlery. This set takes care of most of your prep and other cutting needs. The blades are super sharp. The steel goes through a double hardening process making a very hard blade that can be sharpened to a very acute angle. The Japanese production process including the traditional Honbazuke sharpening method makes a blade that stays sharp for a long time and is easy to maintain. The Western style handle gives me a grip that I am familiar and comfortable with, The paring knife is great for working in hand with peeling and shaping and the chefs knife handles any of my bigger tasks with ease.

Sharp and well balanced

[This review was collected as part of a promotion.] These are my 2nd and 3rd Miyabi knives. They are amazingly sharp and feel well balanced in my hand. I’ve had many brands and this is by far my favorite. Just make sure to dry them as soon as you wash them
