Great Evolution starter set

This is a great Japanese knife set. I really like the feel of the handle on these blades, it’s very comfortable and contours nicely. The blades have a nice lighter weight to it, but are very sharp. This is a great intro knife collection if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together with the ice hardening of the FC61 steel, making it a much more durable Japanese knife. This is a really great starter knife set to build your collection of Miyabi Evolution knives.

Great Japanese set. The 6" chef and paring are priceless. The blades are super sharp. The curved handles are comfortable. Both are lightweight. Everything you would want in a Japanese knife with the durability of a German knife.

This is my favorite Miyabi line. Unsurpassed quality. I use the chef's knife all the time. This pair is excellent for slicing fruits and vegetable. It's not fussy. It's simply the sharpest, most pleasing to hold and use knife I've ever owned.

Great Japanese knife set with a symmetrical handle. Blade has an acute edge angle for scalpel-like sharpness and a well rounded heel providing tireless cutting. Excellent value!

Evolution has always been my favorite line of knives from Miyabi. Very approachable, easy to care for and familiar in the hand. Made from superior FC61 stainless steel these knives are more chip and corrosion resistant than most Asian steels and will hold their acute edge angle longer as well. The POM handle is smooth and feels secure even when wet. This is my go to knife and this set is a perfect combo, pretty much has everything you need to accomplish any cutting challenge.

Good Starter Set

I gave an Evolution to my cousin and his wife since they were looking to start using 'grown up tools' in their kitchen. The kids were old enough and they just decided it was time. He thanks me every time we see each other, and occasionally I get pictures of something they have cooked.
This is that kind of knife, it inspires love and cooking creativity. It is a hybrid of Japanese and German knife making traditions. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
This 8-inch chef's knife with paring knife is an ideal combination if you want to be able to get the basics covered. The chef's knife is for almost all food preparation - meats, vegetables, fruits. The paring knife is for smaller needs, coring a tomato, peeling an apple. Evolution knives are dishwasher safe, but hand wash to retain the beauty and look of new.
