Sharp and Durable

This is one of my favorite knives. It's made in Japan, has a very thin blade and very small edge that makes it as sharp as a scalpel. But unlike many Japanese knives, it is very chip resistant and durable. It has the handle design of the German knives with the three rivets and curve that I love. With a chef and a paring knife, you can do most anything.

Best of both worlds with a German handle and Japanese blade. This blade is wider than other Miyabi chef knives giving you fantastic knuckle clearance, great for someone with bigger hands. The red striping in the handle add a little pop of color! This set is great, use the chefs knife for chopping, dicing, mincing and slicing. The parer is good for small jobs and hand work.

Perfect set of two of the most used knives in the kitchen, add a bread knife and you are set to start your collection! I use the paring knife daily and this 6" chef is easy to maneuver for me. It fits snuggly in my hand and I can work quickly with the shorter chef knife. The FC61 steel is very sharp and due to the double ice-hardening process, extremely durable. This means these knives are going to stay sharper longer and last for years to come.

Nice combo and the two of them can almost do anything you need in a kitchen. The blade is made from FC61 carbide steel so both are extremely durable. The handles are traditional German 3 riveted style which is extremely comfortable even when attacking big prep projects.

The Miyabi name means superior quality and craftsmanship! These are made form German steel, and Japanese artisans; what could be better than that combo? Both are knives you will use daily! A great duet that will stand the text of time, from the Friodur process of ice-hardening which give you an extra-sharp blade and keeps it durable, to the non-corrosion and no-chip blade. The handle gives a good and comfortable grip.

Miyabi Evolution knives are a good choice if you are looking for a authentic thin profile, super sharp Japanese style blade with a more western handle for the comfort you are used to. Evolution blades are simple with a mirror polished finish and are corrosion and chip resistant. This two piece set is a good way to start your collection providing you with a paring knife and a chef's knife two of every chef's most used knives.

The 2 most essential knives for any kitchen.The Evolution line has an asian inspired western handle, comfortable for both the right and left handed. The Steel used in the blase is forgiving like a german knife, resistant to knicks and chips on the cutting edge. Easily sharpened back to sharp edge, it still has the feel and angle of an Asian knife.
