Roast a chicken in this Coq au Vin and it will become a family favorite! It will become yours too because it is so easy. The heavy duty cast iron oval oven with beautiful enamel coating is a standard in French households. It will roast a chicken, duck or small beef or pork roast. And don't let the oval shape distract you, I've made many a stew and chili, even cornbread, in this pot.
This oval cocotte is nice and roomy for roasts and large batches of soups or stews. Like all Staub the black interior provides a nice browning and the flat lid with dimples helps to keep the juices basting back down over the whole contents as they cook. The enamel exterior clean up so nicely even if something is baked on you can scrub it off without scratching the exterior. You can feel the quality in all Staub pieces.
This Staub cookware piece was my first piece of Staub that I owned. My daughter bought it for me for Mother's day a decade+ ago. I last used it for Christmas dinner a few months ago when I made Coq au Vin. It browns perfectly without any sticking of the protein due to the black enameled interior. This piece is perfect for long braises in the oven due to the spikes on the lid interior, which continually baste the contents. I have never had anything come out other than fabulous.
What's great about this pot, I'll start with the heaving lid that fits tightly so no moisture escapes...result moist chicken; second is the dimples on the lid...trapped moisture drips back on food resulting in even more moist cooking; and third is the black interior that browns beautifully...color is flavor. Take it straight from the stove to the table and you've got a hot meal that's going to stay hot in a beautiful serving piece...and only one pan to wash. But it's not just for chicken or meat! I use it on the stove top for soups, chili, gumbo and more.
First of all, I love the color and shape of this pot!! I tend to use this for whole chicken recipes!! Love the even browning you get! I have plenty of room for other veggies. From the oven to table, this is stunning cooking vessel!
