Black is the new gas!

[This review was collected as part of a promotion.] When we bought our first house in the 1990s, cooking with natural gas was the trendy thing to do. People who had grown up on mediocre electric resistances stoves discovered gas and realized that the quality of the tools do matter to the end product. When it came time to build a house for our own family, we invested a ton of time and effort trying to determine what technologies out there could improve our lives. Induction is among the best that we found, and our Bosch 36" cooktop is about the best value there is.
Key things that we love: 1) Smooth glass surface that is trivially easy to clean. No more having to dig deep into the bowels of the gas burners when a pot of pasta boiled over (or worse).
2) Smooth glass surface that can also be an extra work surface. Did I mention that we love the smooth glass surface?
3) To quote the guys from Top Gear: POWER!!! That same stock pot of water to boil a large batch of pasta used to take over half an hour to get going. Now? It's not instantaneous, but you do need to prep your ingredients before putting the water on to boil (<5 minutes).
4) Timers. This is really where Bosch shines. Each burner has a timer that turns the hob off. Making rice or quinoa? 15 minutes and off.
5) Efficiency. I know intellectually that induction is more efficient, but it really doesn't mean much. What I experience every time I cook, though, is how much less hot my kitchen gets since almost all of the heat goes into the pot/pan/dish I'm cooking. That makes cooking more pleasurable, and it makes the house heat up a lot less.
Perceived negatives: 1) You can't flambe. I'm an avid cook, and I may try to flambe some year. If so, I've got a match for that.
2) Wok cooking. So you have to use a flat-bottom wok. I cook a fair amount of stir-fry, and while it may be less like I'm sitting in an authentic Chinese restaurant blast furnace/kitchen, but I'm okay with that.
Real Negatives - call it a half star each: 1) We did have to buy new cookware, which was not cheap.
2) The cooktop recommends a 50 amp circuit. We were building new, so this was easier. However, we did have to push the builder and electrical contractor a bit to make sure that we got the right circuits for our high-powered kitchen. As a retrofit, this may be a deal-breaker for some.

[This review was collected as part of a promotion.] Great cooktop. I wish I would of known that induction cooktop only works on certain type of frying pan. If it sticks with magnet then it work. We had to learn the hard way.

Easy to Use

[This review was collected as part of a promotion.] We do not use a microwave type oven, so the induction cooktop was the best choice for us. Gets food up to high temperatures in a hurry! Love the simplicity - even my visually impaired husband can cook on it. Cleans up easy since it's all one surface.

[This review was collected as part of a promotion.] I continue to love this cooktop. It boils water in what seems a minute. Temp control is so easy. I can break an egg into a frying pan, leave, and never worry it's over cooked. Instantly increases or decreases temp. Remember how something comes to a boil and spills over on your stove? With this just quickly reduce the temp and boiling stops immediately! This is the only cook top I would ever have. For me, it makes cooking with gas old fashion! I increased my size from 30 to 36 and that was the best thing I ever did.
