After I dropped a very expensive German made chief knife across the top of my foot, I went to my local knife specialty shop and discovered the wonderful Shun dual core knives. I bought the four styles they had and I LOVE them. Once I picked up the octagonal handle, I was in love! I have arthritis and both of my thumb joints have been replaced twice. The handles of the dual core knives register, if that makes sense, with my hands. I can grasp them and they don’t slip and I don’t cut myself.:grin::grin:

Had wanted to try one of the dual core knives for a while, but the price held me back. With the clearance sale, I decided to go for it. Well made, as expected. Balance point is right, and the weight is just about prefect. Was not as sharp out of the box as I have come to expect from Shun, but that was easily remedied with a waterstone. Now it slices, dices and chops pretty effortlessly.
I love knives, so I purchased this one even though I have a full set of kitchen knives. You can never have enough knives! The edge is very good but it's so fine, it's hard to see. The handle is great, the hexagonal shape makes it easy to retain an angle while cutting.
This is a work of art as much as it is a kitchen utensil. Ah, utensil is too base of a word to describe this knife. It's so beautiful, I almost don't want to use it ... almost.

I have well over 100 blades and have been a professional chef since 1978. I bought two Shuns at the NRA convention in Chicago last month and absolutely love them. They are extremely light and hold an edge. The handle on this one is perfect to accommodate a pinch grip. I have very fast and accurate knife skills and these blades make me even faster!
