The Super Parer is my favorite knife. It has a very sharp edge and the thin blade makes it easy to slice anything thinly, when needed. This knife holds the sharp edge, too.

I have been using this paring knife for 60 years! It has always been and will always be my go-to knife, the most important piece in my mise en place. The first one was a gift from my mother. She bought it through our church which was selling them as a fund-raiser. They stay sharp forever and when they finally do need a bit of a sharper edge that's easy to do.
