Great knife for prepping and

Great knife for prepping and cutting larger cuts of meat. Blade is very sharp and the curve makes for easy work of hard to reach areas while the small tip is great for little details.

Absolutely gorgeous blade. Razor sharp but most importantly the balance makes cutting and trimming meat a breeze. Looking forward to using it on wild game once the season starts.

I was hoping for a thinner and more flexible blade. This is more of a boning knife than a filet blade.

Another Great Shun Knife

I recently added the Premier Boning & Fillet knife to my growing Shun Premier collection of knives. This knife, like all of my other Premier knives, is scary sharp, which is exactly what I’ve come to expect from Shun. I’ve used the knife for several BBQ trimming tasks, and it’s performed flawlessly. I can perform highly precise trims that look perfect, with no ragged edges, just nice clean cuts. The shape and size of the knife is perfect for my needs, and of course, it’s strikingly beautiful like all of my Shun Premier knives. It’s another great addition to my Shun Premier collection!

Filet or Bone with ease

With the super razor sharp angled blade boning meats is a breeze as is cleaning the silver skin off of meats. Took a bit to get used to as I transitioned from my old boning knife that was a straight blade but now I love this knife.

Sharpness with elegance

This knife is as sharp as it is beautiful. I am not a chef or a professional, just the average guy in a kitchen but I hate fat on my meats. Trimming excess fat from any meat is a breeze with this knife! All the knives I've owned prior to this one, I had to use a sawing motion to cut fat off. This knife, I just rest on the meat and pull back, it really is like a hot knife through butter! Chicken fat and beef fat cutoff so easy, its scary! Want to slice and dice a cheap Flank steak to cube up, this is your knife! As a test, I took a rip tomato and rested this knife and just pulled back. Under the blades own weight, it had pierced the skin and cut about half way down(1.5""). I know it is not meant for tomatoes but I wanted to experiment. As for the looks, I find myself just looking at the blade in amazement. Very sexy! The handle fits my hand perfectly and I have large hands! This knife is razor sharp, well balanced and looks awesome.
