Truly surprised how much we've been using this. We've made our own simple syrup, and some fantastic whole-fruit margaritas. We've also used it to make hollandaise sauce, salad dressing, and hot cocoa. That being said, if you don't think you'll be making very many cocktails or salad dressings, this might not be for you. It is definitely a niche item, but it is great at what it does.
