Took what was already great and made it better

This is my 3rd Presto pressure canner. I have a "regular" stovetop canner that I got when we got married 35+ years ago that is still going strong. I have the original version of the Presto Precise that was released a few years ago. And now this second generation of the Presto Precise.
All are solid canners. In truth, I hardly ever use my stovetop one anymore, though I keep it just in case I end up needing to do a huge batch. The digital canners are that big of an upgrade.
This latest Presto Precise takes what I thought was already pretty awesome and makes it better. I really like the larger capacity and it is actually lighter to carry around empty. The ability to water bath quarts is wonderful (tho I usually use a steam canner for water bath recipes, it's good to have this if I have a large batch to process). And it looks great and the digital controls preserve the ease of the original version. I do like the way this one closes, I think it is superior to the green latch of the first generation. Highly recommended. This newest "Precise" will become my main canner now,

[This review was collected as part of a promotion.] The Presto Digital Pressure Canner quite literally saved our canning workshop. Upon arrival at the site in a rural area, we discovered all the stoves had been removed from the location and the small countertop portable burners were not conducive to canning.
Thankfully, I had brought along two earlier models of the Presto digital canner and two additional electric water bath canners. We were able to proceed and we successfully pressure canning and water bath canning a variety of foods.
Many of our workshop participants had never used a digital canner—or even a stovetop pressure canner—but they easily followed the clear, step-by-step instructions. Best of all, every single jar sealed.
Presto, Inc. has a long and respected history as a canning equipment manufacturer, and the brand is familiar to many of us in Extension food preservation. As a reviewer of the 23-quart Presto Digital Pressure Canner, I believe this innovation has the potential to bring a new generation into home canning.
This versatile device can safely process both low-acid foods (using pressure canning) and acidic or acidified foods (using the boiling water method). Compared to traditional models, the digital canner is quieter and keeps a kitchen noticeably cooler. The larger capacity of the 23-quart model is another advantage; it can hold up to 20 regular-mouth pints or 16 wide-mouth pints when jars are double-stacked, or up to 7 quarts.
Its built-in safety features and user-friendly design make it consumer-friendly to use. It handles altitude adjustments automatically and includes a digital display, clear instructions, and a helpful troubleshooting guide with explanations for each error code. It also provides both visual and auditory cues during the canning phases.
While the digital canner does represent a higher initial investment than traditional stovetop models, its convenience, safety, and ease of use may inspire more people—especially beginners—to start preserving food at home.

[This review was collected as part of a promotion.] The 23-quart Presto Digital Pressure Canner is a stand-alone appliance which allows you to use your stovetop for other tasks. If you have a glass stovetop, this appliance is a great alternative.
These Presto Digital canners can be used for pressure canning and water bath canning. The instructions are easy to follow. Always thoroughly read the instruction booklet and the one-page user guide. There are some details in the booklet that are not noted in the one-page user guide.
When first using it, always do a practice run with water-filled jars to learn how the appliance works. Do not attempt to skip any steps in using these appliances. There are alerts that sound as the appliance moves through the canning process. This is beneficial, and there are some steps that require your attention.
Other features that are beneficial include a power cord permanently attached to the canner, a regulator weight that is easy to put on and remove for pressure canning, and when pressure canning the appliance automatically adjusts for your elevation. Note: for water bath canning, time must be added to adjust for elevation when setting the processing time.
Overall, this canner is a winner!

I've been a lifelong user of Presto stovetop canners and when I stumbled upon the 12 quart PPDC, I knew I had to get one! I love the ease of use! When the 17 quart PPDC came out, I knew I had to have it! Canning larger capacities is wonderful! And then...the new 23 quart hybrid came out...yes, I "needed" it! I love how light it is for its size (lighter than the original PPDCs). I love that the lid and canner body are designed as traditional stovetop canners (no more worrying that I'm going to break the green latch). To me, the biggest improvement with this design is the fact the sealing ring stays put when in use! No fiddling with it to assure it's seated properly, throughout the process! The canning rack is solid and doesn't have rubber "feet" to worry about losing. I was concerned this canner would heat up the kitchen, but it doesn't! Beware: the outside does get hot. The jar warming stage does seem to take a bit longer, but it's no big deal, as it gives me plenty of time to prep! The canner also runs as quietly as the original PPDCs! Cooldown period is significantly shorter than the originals, as well, allowing for me to run multiple loads if I need to. The only CON for me is: there is no "fill line" that I can see or feel. Having to measure 3 quarts is easy enough to get used to...I was spoiled by the fill lines in the originals.

This product is so easy to use! I get a perfect seal every time and I don’t have issues with things coming to temp at the wrong time. This has been much safer than canning on my stove top

[This review was collected as part of a promotion.] I finally took my 23 qt canner out of box did the water test then canned up some tomato juice. Upon taking it out of the box I was impressed with how light this canner is!!! As I get older the weight of my other canners was going to be an issue especially the 17qt (I have 2-12qt and 1- 17qt) This canner has the same digital display and works the same as 12 and 17 qt as far as the digital display. I used wb function. I wanted qts and pints so I got out a 12qt and canned qts and pints at same time. I didn't test to see which one was quicker as that is irrelevant to me. One thing I did want to see is how much steam would be released into the kitchen and by far the 23 qt puts out a lot more steam. It doesn't play a factor for me as I have space next to the sink and if I turn then no steam hits cupboards. Wanted to mention in case that is a factor for some. I absolutely 💯 love the sealing ring in this canner, had zero issue with it and it stayed in place. The cord is no longer removable taking away the human error of plughing it in to canner all the way. Cord is also a lot longer compared to the 12qt/17qt. Having 3 sizes of the presto digital canner now.....I would hands down tell anyone to invest in the 23qt as it can pc and wb all size jars and is so light weight. The only thing I would say that are a down fall but really in the big picture they aren't lol is cord place ment and the plug on top that has to be removed when waterbathing to let steam out. Cord is directly in back so when I grab handles to dump water in the sink the cord hit counter, I wish it was to the side so it didn't get in way when dumping. Also, now have to factor in human error when removing the plug. Also wish it came with a few of these pluds as I am sure I'm gonna misplace it lol time to place a parts order 😄 I have been using the presto digital canner since they first came out, Santa got me my first one year they came on market. I will never go back to a stovetop pressure canner or water bath canner!!! There is still some watching this canner as u have to advance cycle forward and get it to the next step but nothing compared to watching heat and adjusting it for a dial guage/jiggler!!!

It is normal for the inside of the canner to discolor. This discoloration, which is not harmful, is a result of the various minerals in your water interacting with the aluminum of the canner. To minimize this discoloration, add 1 teaspoon cream of tarter or 2 tablespoons of white vinegar to the water in the canner each time you use it. Enjoy your canner!
