Adding the 8" butchers knife rounded out the current holding of 6 knives with additional 3 paring knives and a cleaver. The knives were purchased when I was a prep cook prior to becoming a sous chef. I left the restaurant trade decades ago yet these knives are my go to/ my daily use knives for over 40 years. The new 8" will fill the cap and has already become eth first grabbed knife in the block. excellent long lasting edge, comfortable to grip and well balanced.
