Just holding this knife puts me in my happy place! I absolutely adore the look and the feel of this knife in my hands. But beyond that, I have never had a knife do its job as efficiently and as smoothly as with this knife. The shape of the rocking Santoku is perfect for every task that I do with a large profile knife. I get a great chop from the flat part of the blade and the full cutting motion with the curve at the front. The Rocking Santoku is pure genius and when you put it into the beautiful Artisan handle and blade you have reached perfection!
This rocking santoku is made from SG2 steel which is very hard and has a more even grain structure which increases the sharp edge retention. The hammered finish is beautiful and the rocking edge allows for both chopping and rocking motion. You will love this knife!
This knife is seriously worth the investment. It has SG2 steel and is super tough. It holds its edge super well, and the fact that the santoku is rocking makes it so you can get the chop of the santoku without lifting your blade. Definitely helps for fatigue free cutting.
The artisan rocking santoku is the perfect knife for rocking or chopping. But the SG2 steel is what makes it razor sharp. Thammered finish is beautiful and this "rough" finish helps food slide off of the knife. The curved, long handle is a perfect fit in my hand. It is truly a thing of beauty.
What I love the most with this Miyabi knife is it rocks quietly for it is so sharpness and functionality is awesome..!!! I'd use this every day and never needed a lot of sharpening because it stays sharp as long that you honed it once in a while. Don't forget The potent core of SG2 micro-carbide powder steel is layered in a Tsuchime finish. This exquisite, hand-hammered effect helps prevent food from sticking. Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago.
I am left handed and was looking for a Japanese style knife that would feel comfortable in my hand. Most Japanese knives are right hand oriented. I discovered that the Miyabi line of knives are designed to feel great in both the right and left hand. Hadn't tried a rocking santoku yet so I gave this a spin. WOW....felt great and secure in my left hand, the narrow edge made cutting a joy and the weight was perfect. Chopping once was a chore now with this knife it's a pleasure.
Miyabi Artisan is my fav line from Miyabi. I love the belly on the handle, it fits perfectly in my hand. The SG2 Steel retains an edge for an incredibly long time. I haven't had any chipping issues! PLUS its just beautiful!!
