This knife is a perfect size for everyday use in any kitchen. It’s very sharp and holds an edge for a long time. The Damascus pattern on the blade is beautiful. The handle is lightweight and each handle varies from each other.
I would recommend this to a friend!

Such a well made Japanese knife...and the sharpness is beyond wonderful. Everyone needs to buy one! A little expensive, but well worth the price.

The Birchwood series from Miyabi is a must for every kitchen. You will fall in love with the way it looks AND performs! I like the feel of a 6" Chef, as sometimes a 7 or 8" is too big for my hand. The Damascus pattern is stunning and makes for a sharp and durable knife!

I absolutely love this knife. Have had the Birchwood chef for a few months and thought Id treat myself to another pretty birchwood shape. First off, the handle is georgous! I know it requires a bit more attention because it is really wood and can swell and shrink if its wet too long,But that said, its such a beautiful knife I'd take extra good care of it any way! the smaller chef size is new to me and I am now forever a fan! Chopping and slicing with an asian chef, the flatter blade has much better contact area with the cutting board and cleaner cuts of the vegetables. It is lightweight but does the job as well or better than other knives. My hubby thinks the handle is a bit slight for him... Great he will stay away from my knife!

Just a Perfect Sized Knife...

People looking for slightly shorter, best-quality chefs knife...look no further. SG2 forged, micro-carbide Japanese steel with perfect balance. Add to it a real birch wood handle and 100 wraps for stability and Damascus pattern and it's the whole package.

Cuts Through Like Butter! Small-Hands Friendly!

[This review was collected as part of a promotion.] This knife cuts though like butter, without the calories. I’m seriously impressed - my wallet, not so much. The quality and craftsmanship of this knife goes above and beyond. “Miyabi” is exactly how I’d describe it. I was initially hesitant to invest in a Birchwood knife, but I’m glad I did! I now can’t wait to get my tiny paws on my next Birchwood. I use this knife for slicing, dicing, and even mincing. I tried the 8” size as well but felt that it didn’t suit my smaller hands, due to the handle weight coupled with the longer blade length - especially because I wanted more of an all-rounder. I could also see my wrists tiring, as a result. (The Kaizen 8” suits me better.) For reference, my hands barely fit size small plastic gloves. The 6” felt a lot more comfortable - really like an extension of my arm! I feel that knife has very good balance with its blade length and handle weight. This knife also feels very sturdy with such a thin blade. All in all, this is a very solid knife that’ll remain in my kitchen indefinitely. For those who are hesitant like I was to invest in Birchwood - remember that we need to eat, to eat - we need to cook, and, to cook - we need knives to cut food. Having a reliable knife really saves time and is safer (But don’t forget that this knife really is beyond razor sharp!)
