A paring knife that is a pleasure to work with. The Kaizen 4.5" blade is perfect for everyday cutting and peeling jobs in the kitchen. The Japanese VH10 steel remains sharp, and is easy to sharpen, allowing me to peel 20 pounds of potatoes without hand fatigue.
The D shaped handle is comfortable and the Micarta handle is extremely durable, requiring limited maintenance, and is also slip resistant. This knife is a joy to work with and gets a great work out.
