A perfectly sized paring knife made with high carbon Steel. The Miyabi Kaizen line is a traditional look and feel for a Japanese knife. the D shaped handle feels very comfortable in the right hand but may feel more movement for a left handed chef.

Great paring knife

This is a great paring knife because it is a little longer than the typical and the handle is tapered so that it is easy to hold and very comfortable to use. The blade has a beautiful design and you can tell the fine craftsmanship that was put into the design.

The Miyabi Kaizen paring knives are both elegant to use and beautiful to look at. The slim D-shaped handle tucks into the fingers confidently. The blade is both hard and light at the same time, making it glide through delicate fruits and hearty peels effortlessly. That's because the 64 layers of molten steel applied over the VG10 steel core hold a tight edge. Less work for more precise cuts.
Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and the linen Micarta handle with finishing details combine to make using and owning this knife a joy.

Great Japanese carbide VG-10 (long known as Japanese fantastic knife steel) in a well-weighted, perfect paring knife. Micarta handle is nearly indestructible..

This is a very good paring knife. The slim D shaped handle is comfortable to hold while working in hand. The Micarta handle is very light. The blade is very sharp. The Super Steel construction stays sharp for a very long time and is easy to maintain. The Damascus style pattern is very unique and shows the Japanese craftsmanship and artistry put into this knife.

Longer Paring Knife

Love having the 4.5 length on the blade. Great for removing silver skin from pork and beef. Particularly useful when trimming fat from brisket. Just the right size to glide through the fat packet. Great for paring, and slicing vegetables. The shape of a mini chef's knife which makes it perfect for smaller cutting jobs in the kitchen. Japanese steel, really holds and edge, and the D shaped handle offers a comfortable grip.
