Beautiful and Excellent

[This review was collected as part of a promotion.] I just purchased this slicer to add to my Miyabi Birchwood collection (5 knives so far). It is not only just a beautiful knife, but it is exactly what I needed for making sushi and cutting fish. It makes all the difference in the world when working in the kitchen - just like all my Miyabi knives. I don't know how I functioned without them in all my years of cooking, but just so glad that I have them now!

Amazing

First up, this knife is evenly balanced. I cannot say the same for the knife being replaced. Secondly it is stunning and super sharp out of the box. 10 out of 10 a wonderful knife. This is slowly replacing a knife set that cannot pass a paper test. Needless to say - the differences are night and day. Miyabi Birchwood series are the best.

[This review was collected as part of a promotion.] This has to be the sharpest knife that I have ever used. It cuts through roasts, fish, sushi, and so much more and it really does cut like butter. Awesome knife and I tell everyone I know about it.

Japanese knife perfection

[This review was collected as part of a promotion.] This is the last of the birchwood knives that I bought for my collection and it does not disappoint. The birchwood series have scalpel like sharpness that last longer than any knives I have owned. I absolutely love these knives and look forward to cutting and slicing in the kitchen now!

great laser slicer

[This review was collected as part of a promotion.] picked up the miyabi birchwood sujihiki for cutting meat and fish.
fit & finish is impeccable, and the birchwood handle pops with a little bit of tung oil.
its a laser, but will be a pain in the rear to sharpen if you dont have the proper stones.
sticks a bit at first due to the mirror finish, but will release after a little use.

Slicing the easy way

Bagels, breads, roasts, briskets, whole chickens, I haven’t found anything that makes the experience slicing with this knife anything less than amazing! Always a nice conversation piece when you break it out to carve the turkey amongst friends and family too.
