First "Real" Knife

This is my first "real" knife purchase. I'd say I'm a intermediate to advanced home cook and I spend a lot of time in the kitchen on weekends meal prepping for the rest of my week, i.e. lots of cutting up vegetables and trimming poultry for salads and other meals. I've had a decent knife set for the last 15 years that I rely on, but I was looking for a higher end chef's knife that held a better edge and helped me get through my prep quicker and more efficiently. I landed on the Kaizen II Gyutoh after a ton of research and when it showed up I was definitely impressed. It's a different shape for me and I'm excited to develop my knife skills with this. I've used the knife a couple of times now and it's very satisfying to cut with. The knife is very balanced and sharp for precise cuts. I've already noticed that my knife hand is less fatigued after meal prepping for the week. I cook a lot with my best friend and we've been fighting over who gets to use the knife lol. I'm going to add the Santoku to take care of that issue. I fortunately got this knife on sale, and if you're on the fence because of the price I would say it's worth it, especially if you cook often. I've always taken good care of my other knives (immediately hand wash and dry after every use) and I'm confident with the same level of care this knife will last me many many years and delicious meals...plus it just looks like a piece of art in your hand!

The finishings on this knife are absolutely stunning and make the cool factor of the knife 10/10. When it comes to the actually performance of the knife it is just as great as the looks. It cuts everything so easily from fruits, vegetables, meats, you name it, it cuts! Highly recommend this knife!
