Thrilled with the look, feel & functionality

[This review was collected as part of a promotion.] First, it's just beautiful. More like art than a kitchen utensil. You can see and feel the pride in craftsmanship as soon as you hold it in your hand.
This is my first Japanese knife, have always used Zwilling western style before. The department store grade, nice, but not in this knifes arena at all.
First day I had to run it through its paces. Made a homemade chicken soup with potatoes, celery, carrots, chicken of course. The Miyabi ripped through each of them like butter. Has an excellent hand feel (is that a phrase)? I have large to Xlarge hands and it doesn't feel dainty.
And it's SHARP, not so sharp you have to fear the blade...and I'm sure with the quality of the steel someone could get it even sharper. But for my moderate cooking needs it's perfect.
Glad I did my brand rese a research. Was going to go with Chinese Cangshan, then started reading and was going to go with Shun....until I saw a comparo with Miyabi. Now I want to expand my knowledge and collection!
Buy it...you'll love it.

New kind of toughness

Japanese knives have always been known to be incredibly sharp. Anyone that has owned one knows that sharpness sometimes comes with a price; they are prone to chipping. This is due to the fact that what makes them so sharp is a thinner blade and a very thin edge.
Kaizen II has conquered that problem with a new type of steel, FC61. It is extremely durable and very chip resistant.
Guytoh (ya know you're getting an authentic Japanese knife) or Chef knife can be the work horse in your kitchen. Chopping veggies or slicing meat, it can handle most tasks with ease.
Aside from being a work horse, it's incredibly beautiful with the damascus design. The D shaped handle, again true to Japanese heritage, fits nicely in the palm of your hand.

Excellent Knife

[This review was collected as part of a promotion.] Everything about this product shows its attention to detail, from the excellent craftsmanship of the handle, to the beautiful blade, and even the package it is in. The blade comes out razor sharp, and once you use the knife for a few hours, it the thought into the grip for the ergonomics and control really come forth. Despite it not being flagship of this brand, the thought and execution of this product is most satisfactory, and I personally enjoy the use of this knife now and for the foreseeable future. (That is until I upgrade this chefs knife for another one of their products)

Cuts wonderfully!

[This review was collected as part of a promotion.] It’s absolutely stunning. The hammered finish is really beautiful, my only gripe is that the bevel seems to be a little shallow towards the tip of the knife. Nothing major, but likely enough where we should have caught it.

Game changer!

[This review was collected as part of a promotion.] I attended a knife skills class at a local kitchen supply store recently. We were given multiple options throughout the class to try out. This knife is lightweight and easy to use even for smaller hands. I’ve not put it down since I took it home-it’s now the workhorse of my kitchen!

Beautiful Blade Questionable Tip Sharpness

[This review was collected as part of a promotion.] The blade is very asteticly pleasing with a firm grim shape and a keen blade sharpness. However, right out of the box the tip end of the blade seems to be notesably less sharp failing to cleanly slice through a tested orange.
Custome Letterng from retailer seemed to also have unclean letters(will need to engage with them).

Best knife

I have wanted this knife for so long. I finally received it as a gift this year. It's lightweight enough to fit comfortably in my hands but heavy enough to cut with ease. The sharpness to the blade is something you just have to experience for yourself. Fantastic knife!
