One of the best

[This review was collected as part of a promotion.] So for some of those who may not know; this one is a must. I work in kitchens, I've used several different knives from the Henkels, Wusthof, Sabatier, Dexter Russell, and even cheaper brands like Thyme and Table, Farberware, etc. I like the heft of the Wusthof, but I've used Torjio as well and I loved the edge retention and how comfortable both of them were. The Kaizen II has both; decent heft in the hand and a surgical like sharpness on the cutting edge, and it looks good. The balance hits right around the beginning of the bolster (personally it feels heavy in the rear because I use a pinch grip), but even though it's just a tad heavy in the back I can still easily tap chop for fine cuts, using a rocking motion is effortless since it has that weight. The handle is a great medium thickness for people who don't like a overly thick/bulky handle or too small it's not going to fit right, and I've got large skinny hands. Wouldn't recommend using a steel, definitely a ceramic rod or ceramic reinforce rod for honing. I'd say it's a great entry knife for people looking to get into Japanese knives, in my situation it's my first "real" knife. What seems to work as far as care is if you cut something I'll wipe mine off with a clean rag if I'm really busy but if I have time I do go back and wash, sanitize, and rinse as well as dry it off really really good. I would recommend this knife to anyone.

Amazing knife!

The bread knife was purchased last year and is still in perfect condition! The quality is something you just can’t get everywhere these days. I recommend these knives to everyone!

Crazy Sharp, a Pleasure to Use

[This review was collected as part of a promotion.] From the packaging to the aesthetics of the knife to the actual cutting, this knife is top notch. Vegetable prep is nearly effortless. The blade angle is quite acute; I would sharpen with a whetstone or send to Zwilling/Miyabi for sharpening. Don’t using a honing steel. Hand wash only and dry. Use a nice wooden cutting board and this knife should last a very, very long time.

Sharp, balanced and the perfect size

[This review was collected as part of a promotion.] I cook daily for my family and derive a lot of pleasure from a well crafted knife. I began with clunkier German knives but find that I enjoy the finer edge and easier handling of Japanese knives. I’ve used MAC and Kan knives for the past two years and enjoyed them. This knife is a substantial improvement. It is as sharp as you would expect, but for me, the real difference has been the long, thinner blade balanced with a slightly larger handle. The balance point is perfect for using a pinch grip, just where the ebony meets metal. This makes knife work a pleasure, even the fussier cuts.

The Ultimate Knife

[This review was collected as part of a promotion.] I am a beginner chef and am just getting into cooking. After practicing with so many sloppy and dull knives, I decided to upgrade myself to the real deal and get a Japanese knife. I chose the Miyabi Kaizen II Chef’s Knife due to the large amount reviews that say positive things, and I was definitely not disappointed! This is my first Japanese knife and I have to say, it is absolutely beautiful. I really love the wavy design of the blade, and love the wooden smooth feel of the handle and grip. Grip feels really good in hand and I don’t get tired at all. The blade is super sharp and I am able to make clean thin slices of vegetables that I was never ever able to do before with my old knives. I must say, I have become quite the fan, and I am finding every excuse to cook more often so that I can use this knife. This is now my go to knife for every time I am in the kitchen. It was a bit pricey but it was well worth it. I recommend this to anyone looking for their first luxury knife, as it was mine!
