I could not wait to get home to research it and order one for myself. It is an investment knife. I used it as soon as I received it to cut a watermelon and it cut it like butter. Hoping to get me another one of another size soon.

[This review was collected as part of a promotion.] As long as you take care of your knives*, you will LOVE the Miyabi brand. Durable, lightweight, precise, and excellent edge retention. Cooking is my career and I always find myself reaching for a Miyabi as my favorite, sharpest knife from my roll. THIS model in particular has been the most comfortable for all-day use with noticeably less hand fatigue. I really love my purchase!
* Proper care: Always hand wash knives. Use a honing steel in between uses. Wipe off frequently as you prep, never let food dry & crust up your blade. After hand washing, use a clean towel to carefully dry, then either use a blade protector/cover or return your knife to its original box. Lastly, take it in for regular professional sharpening.
