These knives are handmade in Japan by skilled craftsmen and take 42 days to complete. The balance and lightness is perfect. The blade is razor sharp and easy to maintain. As a professional chef, nothing is more important than your knife. I would recommend this knife to anyone looking to upgrade their current knife.
