Many years ago, I was a partner in a chain of 24-hour coffee shops. I spent a fair amount of time behind the cook line, filling in for cooks who were late or swamped. I don't miss those days at all, but still cook for pleasure.
Spending hundreds of hours doing volume cooking makes you appreciate having the right equipment. Although durability is important in a commercial setting, having tools--especially knives--that do their job well is critically important.
I bought my 8-inch chef's knife about six months ago and have used it every day. It is exquisitely sharp and has maintained its edge perfectly using only a steel from time to time. It is on the heavy side (a plus in my opinion) but perfectly well balanced. The shape of the handle and bolster fit my hand well and facilitate precise handling. Even mundane tasks like chopping vegetables has a sort of sensuous, pleasurable feel.
I expect to pass this beautiful knife on to my children. Highly recommended.

Tired of working with chinzy, poor quality cutlery. My friend has this knife and I went by her recommendation, so glad I did. This knife is the shapest knife I've every used. It cuts through all the veggies I need for salads and stir frys. Wish I had this years ago, would have made my work in the kitchen so much easier.
I decided to buy this particular knife while watching MasterClass with Gordon Ramsey and admired his amazing knife skills. He talked about importance of good knives. No news to me, I am obsessed with them and have Shun, Kamikoto, and others. I got a screen shot when he put the knife down, because I had to have this one. I saw how it was smoothly going through different meats, veggies, herbs. I ordered it right away, and have been using it all the time. Totally love it. The only downside is that I still have to order correct honing steel. Since the hardness factor of the sharpening steel has to be higher that the one of the knife, one has to use Zwilling J.A. Henckels sharpening steel for honing their knives.
