[This review was collected as part of a promotion.] The Miyabi Santoku blew away all my expectations of what a high quality knife should be like. It’s well balanced, super sharp, and absolutely beautiful. I got it from our wedding registry and I use it more than any other gifts that we received. I recommend this beautiful knife to everyone.
[This review was collected as part of a promotion.] This has become my favorite knife after opening the box. Exquisite finish, agile and bold feel that simply makes cutting and slicing more fun!
This is an amazing santoku. The handle is very comfortable for long term use with the wide D shape. The blade is very sharp. The high carbon steel stays sharp for a long time and is easy to maintain. The acute angle of the blade allows for thin accurate cuts and slices. There is a lot of artistry to this knife as well. The mosaic pin and gold and red embellishments on the handle set it apart from so many other knives. The hammering and sand blasting on the blade are very unique. It is even sharpened in the traditional Japanese Honbazuke method and there is a watermarking above the blade edge just like traditional Katana blades.
Has SG2 Japanese micro-carbide with a hardwood handle that fits every chef in family. Forged with a hammered finish that helps food slide off...Great one!
I love using this knife instead of a chef's knife because it has a wider blade that makes it easier to move food from the cutting board to the pan. I also like this santoku knife is a little shorter than a typical 8" chef's knife, so it is easy to maneuver. The handle is so comfortable to use and the details on the blade are really beautiful.
The first time I splurged and got a 'great' knife, I kept in the box for months. I only pulled it out to prep special meals. Then I hit a milestone birthday - you no the ones - and said 'what the heck am I doing that for?' and now I use it, and all my great knives every day. I even let my husband use them! Go figure!
Great knives serve us, the user. They make cutting and slicing and julienne-ing and chiffonade-ing easier and more fun. And this knife does all that. The santoku is an excellent all purpose knife. Its wide blade keeps it stable when cutting through vegetables and large fruits, and the razor-sharpness of the blade slides right through raw meats, poultry and fish. I give this knife some love - hand wash it, hone it regularly, hardly sharpen it and I am certain it will be there for my next few milestone birthdays.
