Beautiful knife made from Fine Carbide steel (FC61) with 48 layers of Damascus surrounding the core. Each knife is unique, durable and individually balanced. The serration on this bread knife bites nicely into thick bread crusts and smoothly cuts the soft inside with very little crumb.
I would recommend this to a friend!

One great bread knife, comfortable D-shaped Pakka wood handle, I've enjoyed fit and finish of this knife. It is not by surprised that this knife is versatile, great for leafy vegetables and cuts through meats, breads, bagel, and baguette effortless. It is fabricated from FC61 fine carbide steel blade core, its 48 layers of steel surrounding the core create the beautiful Damascus-design ensures durability. FRIODUR ice-hardened for extreme hardness with rockwell hardness of approximately 61.

This gorgeous bread knife can be used for multiple jobs in the kitchen. The core of the blade is made from FC61 carbide and its surrounded by 48 layers of additional steel which create a beautiful Damascus pattern. The handle is an exaggerated D sharp that is comfortable and fits into any hand. I love to use this on anything that has a hard exterior and soft interior, like melons or cabbage.

Chip resistant steel

Kaizen II is made from FC61, an extrememly chip resistant steel. That is especially important with the thin blade and thin edge angle of Japanese knives.
It's a true Japanese knife with a beautiful Damascus design and D shaped handle. The handle is made from Micarta which is a linen and resin mixture that looks and feels like wood but has the moisture resistance and durability of a synthetic material.
This is a great bread knife because it will slice cleanly through a hard loaf of bread without tearing. It's also great for slicing and large melons.

Miyabi knives are quality-driven knives and the Kaizen II series is stunning with the Damascus design and black pakkawood handle. With the 48 layers of steel plus the core, it adds up to one beautiful knife, that is sharp, durable and will not rust. Use this serrated knife for unsliced loaves of bread, rolls, sandwiches that need cut, or your summer tomatoes. Ice-hardened, so you can feel the quality and strength of the steel.

This is a beautiful line and if you are buying your knives in the collection individually, you need a bread knife. It is one of the often used knives in my household and I since I serve bread with every meal at the table, I want a great bread knife to put out as well. The serration on this is fantastic and glides through your artisan breads like butter! Some serrations tear the bread, which makes a huge mess, but the serration on this kinife is sharp and perfect. Cuts a perfect slice every time.

Kaizen knives are made with a core of FC61 steel so they retain their sharp cutting edge longer than other knives. This serrated edge bread knife will provide a lifetime of effortless slicing. The serration is designed to cut through the crusty exterior and then proceed through without tearing the softer interior. It has a gorgeous damascus pattern created by applying 48 additional layers of steel to the core. The traditional Japanese handle has a comfortable curved feel in your hand.
