The Miyabi Evolution Chef's knife is the first Japanese knife I've owned. My son raved about it after he purchased one, so I decided I needed to get one too! This knife is so sharp it makes cutting a breeze. Much lighter than my traditional German knives which makes it a joy to work with. Now that I am using this knife, it makes it difficult to go back to my old knives. Looking forward to adding a parer and utility knife.
