Incredibly Sharp

I've always had German knives because I love the way they feel in my hand and how durable they are. But sometimes you need a sharper knife for fine chopping and fish, and that's were the Japanese knife comes into play. It's much thinner and has a smaller edge but in the past, that could make it easy to chip. Evolution is made from an incredible new steel, FC61, that is very durable and chip resistant. It's made and sold in Japan as a premiuim knife which tells me it's authentic.

It doesn't get any better than this Evolution chef's knife. The handle is so perfectly balanced and the most comfortable to use out of all the Miyabis. The strong blade stays sharp for a really long time, no matter how many times you use it. I love this knife!

Excellent Knife

Excellent knife for someone considering transitioning to Japanese cutlery. Evolution has a symmetrical handle more akin to the western knives. Single composition blade is sharpened more to an Asian angle. Especially like how well rounded the heel of blade is providing tireless cutting.

Love this knife

This is a great Japanese knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it, but is very sharp. This is a great intro knife if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together, making it a much more durable Japanese knife.

I use this knife several times a day. I'm drawn to it! I love the feel of it, the shape of the blade...everything about this knife is amazing. Not as fancy as the other damascus steel knives, but stylish in its simplicity. It is super sharp, medium weight, strong and steady.It's my daily "go to" knife.

Great First Japanese Knife

This knife is made from FC61 steel which is durable and strong. It holds an edge for longer period of time. Handle is a hybrid between Western and Eastern worlds. Will do any job in the kitchen.

Must Love Evolution More Than A Knife!

I received a prep knife evolution 2 years ago and it is wonderful to use. I can't wait to have these 8" chef as well. It is so versatile, so sharp and well made Japanese knife,and well balance.

Best of both worlds with a German handle and Japanese blade. This blade is wider than other Miyabi chef knives giving you fantastic knuckle clearance, great for someone with bigger hands. The red striping in the handle add a little pop of color!
