Sharp!

Love this knife! I was in the market for a Japanese knife but never really loved the way the handles felt in my hand. The German style handle was the first thing that attracted me to this knife It has a great grip and feels really comfortable in the hand. Also love the bolster which is curved rather than straight which also adds to the comfort of holding the knife.
The FC61 steel that is used in the blade, is really durable, and can handle cutting some of the harder items in the kitchen without chipping or cracking. Also love the Japanese angle, which is more acute than the German, making it much sharper and much easier to use.
Miyabi Evolution really checks all the boxes in terms of quality cutlery. It is priced affordably which is something that is hard to find in Japanese Cutlery!
The FC61 steel that is used in the blade, is really durable, and can handle cutting some of the harder items in the kitchen without chipping or cracking. Also love the Japanese angle, which is more acute than the German, making it much sharper and much easier to use.

[This review was collected as part of a promotion.] The ideal fusion of a German and Japanese knife; if your budget doesn't allow both, buy this. It is strong enough to deal with denser items yet retains a lightness in the hand.
