Have been so happy with the purchase of the German /Japanese combo knife! Sharp, comfortable, great handle, keeps an edge, and appreciate its beauty! Miyabi makes excellent knives that last and last. Use this one for everything, especially lunch and dinner menus.

I am fortunate to have several 8" Chef knives to choose to use and this is the one I rely on and consistantly pick up. I like that it feels super secure and familar in my hand. It has a little more weight to it then other Japanese knifes yet has a very narrow edge to give me those perfect thin slices. I recommend this knife for cooks that are wanting to try out a Japanese knife but have always used Western style knives. The transistion is easy and the results are satifying. Easy to care for, comfortable and well weighted, stays sharp through many uses and is easy to care for.

Razor Sharp

This knife will keep its razor sharp edge because the core is made from FC61 steel which is harder and more durable than other types of steel. The handle has a traditional German style feel so if you want to try a Japanese knife but prefer the comfortable handle you are used to this would be a good knife to try.

Thin and Sharp

This Japanese chef knife is extremely sharp and extremely tough. It has FC61 steel so it cuts with such ease and is very durable. It makes precision cuts in the kitchen a seamless process. The handle is designed such that it fits in your hand perfectly, and it does! Great investment.

I really love the feel of this knife. it is exceptionally sharp in looks and cutting! it is a knife that can be used as easily in Japanese style food prep as western style. This handle works best in my house because we have leftys and rightys that help prepare in the kitchen. well worth the investment to keep everyone cooking happy! BTW this is my 3rd knife in this collection and I always come back to this comfortable grip over anything else

I love the sleek design of this knife that is both modern and classic with the black handle and the super sharp blade. I can slice a cucumber super thin using this knife and it makes me feel like I am a sushi chef because of the precision that I can get.

One of favorites now...best of both worlds. Tough like German stainless and Japanese-honed sharpness. The broader blade gets through larger food easier/quicker. Extremely comfortable handle.

The Miyabi line of knives, and this one included, are not only works of art, but they are high performace knives that are constructed to last. With super steels, FC61in the Evolution, and special ice-hardening prossess, they have more acute blade angles (read sharper) and enough thin blade profiles, they are extremely durable. Made in Japan by artisans who have had their craft handed down from genertion to genration, these are to collect and to use!
