The Evolution line has an asian inspired western handle, comfortable for both the right and left handed. The Steel used in the blase is forgiving like a german knife, resistant to knicks and chips on the cutting edge. Easily sharpened back to sharp edge, it still has the feel and angle of an Asian knife.

This 9.5 inch slicing knife is great for carving. Wonderful to have around the holiday times or just to carve your chicken.
The Miyabi Evolution is made from FC61 steel so it is very sharp and durable. The handle is extremely comfortable due to the shape. All in all, they are very beautiful knives.

This is a great slicing knife. The Japanese made blade is strong and sharp. The double hardening process makes a very thin yet durable blade. It stays sharp for a long time and is easy to maintain. The thin blade profile gives straight thin slices. The handle is comfortable and makes me confident in my grip.
I would recommend this to a friend!
