First attracted to this knife because of the sheer beauty. Gorgeous Birchwood handle coupled with a stunning 100 layer Damascus design made this knife a must have. After using for several weeks, I've become amazed at how sharp the edge is, and how long it stays sharp. Nothing like any other knife I've ever used. Great for slicing, chopping, mincing, and peeling. I use this knife for just about everything!
[This review was collected as part of a promotion.] Not only the sharpest knife I’ve used, but the grip makes it feel very comfortable in your hand when slicing anything.
[This review was collected as part of a promotion.] The knife and the handle are finished in a high quality manner and the weight is surprisingly balanced.
[This review was collected as part of a promotion.] Beautifully crafted knife that I am looking forward to age well, specially the birch handle. Cuts sharp and hopefully will be easy to sharpen.
[This review was collected as part of a promotion.] This is my first Miyabi Birchwood knife and based on the ease of use, quality, comfort, and overall feel of this knife, I’ll be buying more from this set. You can absolutely feel the difference between using this knife and other knives that aren’t as good quality. Well worth the money and I highly recommend!
I love the Birchwood line. The wooden handles are each unique. They look better the more you use them. The Damascus style blade shows true Japanese artistry and craftsmanship. The high carbon blade stays sharp for a long time and is easy to maintain. They use the traditional Honbazuke method to give it a razors edge. I like this size for all my vegetable prep. I get nice thin accurate slices and it has good balance in my hand.
SG2 micro-carbide steel is the Japanese premium. Add to it the 100 add'l stabilizing wraps and real birchwood handle and it's a life-long classic. Forged and counterbalanced with a logo'd stainless steel endcap.
