Beautiful and functional

This is one of the most beautiful knives I've ever seen with it's intricate blade to it's handle that's made out of special birchwood that gets more interesting as you use it. This knife is a good length for smaller jobs and the thinness of the blade makes it easy to maneuver.

As Good as it Gets!

SG2 micro-carbide steel is the Japanese premium. Add to it the 100 add'l stabilizing wraps and real birchwood handle and it's a life-long classic. Forged and counterbalanced with a logo'd stainless steel endcap.

beautiful prep knife

I love the Birchwood line.The wooden handles are each unique. They look better the more you use them. The Damascus style blade shows true Japanese artistry and craftsmanship. The high carbon blade stays sharp for a long time and is easy to maintain. They use the traditional Honbazuke method to give it a razors edge. I like this size for all my vegetable prep. I get nice thin accurate slices and it has good balance in my hand.

You can absolutely feel the difference between using this knife and other knives that aren’t as good quality. Well worth the money and I highly recommend!
