I fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy. The chef’s knives are flatter – great for chopping; especially for someone who grew up with a nakiri as my training knife. Enjoy these knives for a lifetime.

The chef knife is the most used knife in the kitchen so you want that knife to be comfortable in your hand, you want it to be sharp and you want that sharpness to last. The Birchwood is made of a super steel, SG2 and it goes through a special hardening process, Cryodur, which makes the knife hard, durable and sharp. This knife is not only beautiful but also an example of what a great Japanese knife is made of.

The Premiere Chef's Knife

If you are looking for top of the line and top grade quality, this is your go to 8" chef's knife. I would rate it higher if I could, but the hardness of steel and sharpness of the blade angle are superior to any chef's knife on the market. These knives are made in Seki, Japan and made from the hardest steels on the market and have the highest quality craftsmanship. The Birchwood handle has an intricate mosaic pin with two red spacers and a an authentic D shaped handle. This knife is perfect for cutting meat, poultry, fish and larger vegetables.

Artistry in a blade

Not only is this knife amazing to work with, it is a work of art. The birchwood handle gives an individuality to my collection. No one will have the exact same one as me. The steel is super sharp and i love the Damascus layering. Its almost too beautiful to use but I do. The quality materials and production makes cooking even more enjoyable than ever.

Artistic aspects - the damascus steel is beautiful and the birch handle is the perfect complement. This knife is a work of art. I am tempted to display it rather than use it but its utility is so high that I will be using this work of art during prep.
