Good new knife

[This review was collected as part of a promotion.] Good knife quality. Not sure how it'll hold over time but handle is sharpness quality is phenomenal. Will have to learn how to sharpen it on a whetstone to maintain.

THE BEST KNIVES I’VE EVER USED AND OWN!!

I have used Miyabi knives since I was first introduced to them in 2021. These knives are the finest knives I ever used, and in my past job at Sur La Table, I had access to many knives, but Miyabi are the knives I fell in love with! Long live Miyabi!!!
BTW, I own the Birchwood 8” Chef Knife and the 7” Nakiri. I plan to purchase the 9” Slicer and either the 3.5” or 5” Pairing Knives.

Extremely sharp, and beautiful

Extremely sharp out of the box. I have been using Japanese knives for 8 years. Couple of shuns, Tojiro and yaxells. Also own a miyabi kaizen 9 inch chef knife. But the birchwood triumphs them all in terms of craftsmanship, looks and sharpness.

Wonderful knife

This is the second Birchwood chef knife I have purchased. Mom took the first one the moment she laid her eyes on it, and had to get a second one. Both of us love this knife, and you just have to be careful not to cut bones or frozen stuff with it.
