I was expecting to not have to use as much pressure to cut through certain veggies, but it’s still better than most knives I’ve used!
[This review was collected as part of a promotion.] The Birchwood gyuto is a gorgeous addition to my knives. I knew immediately that it was no regular kitchen knife simply from the balance. The first cut was literally like using a large scalpel. Having used a variety of Wustoff Classic, Shun Premier and Hikari, this Miyabe elevates the art form in a way I never imagined. Amazing.

My last name is Miyanaga and my sign in is usually miyabi so it’s funny. This knife is pretty. It came sharp, we’ll see how it holds up but I love the blonde handle and the look.
