I’ve been looking at knives ever since I got moved into the kitchen at my job. A lot of the guys/girls use Japanese knives so I went to a Zwilling store near my job. As soon as I held this knife I knew it was the one. Light weight, SHARP, beautiful. I had to buy it. Can’t wait to use it at work and show it off a little
Exceeded any expectations I had. Simply a gorgeous tool whose quality can be felt once held. I personally had my eye on this knife for a couple of weeks before finally placing my order and I am so glad to say that I do not regret it. To anyone on the fence, just know that this is an excellent choice and that all the positivity surrounding it is understated.
I recently purchased the Miyabi Birchwood SG2 8-inch Chef’s Knife, and while I haven’t had the chance to use it yet, I’m already impressed by the craftsmanship. The blade is stunning, with a beautifully patterned 101-layer Damascus steel finish and a razor-sharp Honbazuke edge that speaks to its precision. The Karelian Birchwood handle feels smooth, balanced, and ergonomic in hand, and the overall design reflects the kind of care and tradition you’d expect from Japanese knife-making. I’m genuinely looking forward to putting it to work in the kitchen and seeing how it performs with real prep.
This is a wonderfully designed knife. It’s buttery smooth with how sharp it is. It’s also gorgeous with the Birchwood handle. This has easily replaced my other standard chefs knives as my go to work horse.
