[This review was collected as part of a promotion.] After 15 years of Shun knifes I have finally pulled the trigger on the Miyabi birchwood 8” chef knife. My god the out of the box sharpness is unbelievable. The blade balance is spot on and the rounded spine is a simple touch that makes the knife even more agile. I am forever a Miyabi man now.
