Beautiful Knife, Sharp and well balanced.

[This review was collected as part of a promotion.] This is my current do it all work knife in my Kitchen. I am a NYC fine dinning/banquet Sous Chef and love my Miyabi knives. The Birchwood SG2 Gyotu is my second Miyabi Gyotu and I am more then impressed (I also have a Zwilling Pro Santoku)..I would recommend this knife to any Professional Chef or an experienced with high quality steel and Japanese knives.
I would recommend this to a friend!

Cuts through meat like butter!

I was expecting to not have to use as much pressure to cut through certain veggies, but it’s still better than most knives I’ve used!
